Homemade food restaurant Takokiyo “Bekko Chirashizushi”

This restaurant uses fresh fish landed at Nishiki Fishing Port, processes the fish before it loses its freshness, and makes homemade dishes using traditional seasonings. ``Bekko Chirashi Sushi'' is made by marinating seasonal fish sashimi in an inherited soy sauce sauce until it turns a tortoise-colored color, then placing it on vinegared rice. Gottsu-meshi is a dish made with seasonal seafood and rice, and is so named because it contains many toppings. Both are local dishes that are always served on the dinner table during local celebrations.
We use fish from Nishiki Fishing Port, so of course it's fresh, and the special soy sauce is sourced from nearby Kii-Nagashima, and we use a pot to cook it. Nowadays, the seasoning and preparation of local cuisine is on the verge of extinction, so I think it is our big role to pass it down to young people.
